500 G box of Sicilian Historic Ancient Grain Linguine.

Do it straight up or try adding sauteed cherry tomatoes, shrimp, mushrooms, zucchini, chicken or whatever floats you to your sauce first while you pasta water comes to a boil. Heat it up and toss with your cooked pasta. Optionally add some fresh basil, parsley or hot peppers and dinner is served!

Mom’s Zucchini Sauce - Slice zucchini in thin half moons and saute with thinly sliced sweet onions. Add a splash of white wine, cook one minute and then add your choice of sauce, When your pasta is ready, toss with sauce, add basil or even some mint to your liking.

Fact Sicilian Historic grains are lower gluten and are different gluten than is in most of our food in th US. The Sicilian ancient grains contain TRADITIONAL GLUTEN Strains from 2000 year old semolina varieties. Though it is not recommended for those with Celiac, it may be perfect for those with Gluten Sensitivities as it is easily digestible and has never been modified or sprayed with toxic chemicals.

The MYCOTOXINS in US wheat are, in my opinion, responsible for the meteoric rise in gluten intolerance (not Celiac, but that is only a tiny fraction of those who cannot tolerate gluten).

Mycotoxins (like DON/vomitoxin) come from Fusarium fungus, which needs:

  • Humidity

  • rainfall during flowering

  • cool, wet summers

Sicily has the opposite:

  • Hot

  • Dry 

  • Windy, hot and dry during flowering


So grains grown in Sicily rarely develop DON, and when they do, the levels are extremely low compared with northern climates like North Dakota, Canada, or Northern Europe.

This is why Sicilian “grani antichi” (Tumminia, Russello, Perciasacchi) consistently test the world’s cleanest.
