I am one of only few vendors in the US offering this organic ancient grain pasta from Sicily. They are a very small family owned pastaficio. I hand selected this pasta myself after a through tasting at the Azienda in Corleone.

Fact Sicilian Ancient grains are lower gluten and are different gluten than is in most of our food in th US. The Sicilian ancient grains contain TRADITIONAL GLUTEN Strains from 2000 year old semolina varieties. Though it is not recommended for those with Celiac, it may be perfect for those with Gluten Sensitivities as it is easily digestible and has never been modified or sprayed with toxic chemicals.

Caserecce are a fun, slightly chewy shape. They are made with organic ancient Sicilian grains, Perciasacchi/Tumminia/Russello. Their bronze drawing makes them rough enough to retain seasonings and flavors.

The cleanest grain from Sicily, the only pasta I can eat! And the olive oil is delicious!!!

After eating this absolutely delicious pasta, I can’t imagine eating the other pasta I had eaten before.
The difference is quite evident, and with this pasta, I can really feel it… I’ve only been to Italy twice—- but this takes me right back there.
No going back to the store bought pasta I ate for years.
In addition to the taste difference, which you taste with your first bite, the lower gluten content makes me feel better. No more bloating.
This is the real deal.

Delicious pasta that feels good in my stomach

Great tasting and retains the perfect texture.
But mostly I was starting to not feel good after eating supermarket pasta but dreaded having to give it up. This pasta feels very different in my stomach and I’m thrilled I can eat pasta again and feel good afterwards!!

Dobe: Fantastic Seasoning

I used Ric's Dobe seasoning on a beautiful corvina filet. I coated it with some cilantro/roasted garlic olive oil and then spread the Dobe all over accoringly. I put some oil in the pan and cooked it through on both sides. The taste was phenominal! Oustanding! You're going to love this!

Precious memory!

My wife and I met a Culinary Institue of America. One weekend we took a road trip to Woodstock and found your restaurant. My wife ordered the Purple Haze Shrimp (1995) and I think it had purple cabbage with it. Still remembered to this day! Trying to recreate the dish. The sauce is amazing!
